Salisbury Steak with Mushrooms and Onions

Yep, this dish made my hubby pretty happy last night!  Growing up in the 50s and 60s this was a regular comfort food for us Boomers.
Salisbury Steak with Mushrooms and Onions

1 large onion
1 lb. lean ground beef
1/3 C panko bread crumbs
1 egg, beaten
1 tsp salt
1/2 tsp black pepper
2 C low-sodium beef broth
1 tsp Worcestershire sauce
1/2 garlic powder
1 Tbsp dried parsley
2 C sliced mushrooms
2 Tbsp cornstarch
2 Tbsp water
1.  Halve onion vertically, the thinly slice.

2. Finely chop enough onion slices to measure 1/4 C, then gently combine onion with beef, panko, egg, salt, and pepper in a bowl.  Shape into 4 patties about 3/4 inches thick.

3.  Cook patties in a large skillet over medium heat until each is browned on both sides, about 10 minutes. Cook until an instant-read thermometer inserted into centers registers 160F. Transfer patties to a platter and cover with foil. Add remaining onion slices and mushrooms to pan, saute until onions are translucent; add broth to pan along with Worcestershire, garlic powder and parsley; simmer on medium low, covered, about 10 minutes.

4.   Stir together cornstarch and water in a small bowl, then stir into mixture in skillet, cook, stirring, until thickened and bubbly. Add patties to gravy and heat for 5 minutes, turning patties and simmer another 5 minute.  Pour gravy over patties to serve.  I generally serve with mashed potatoes and usually green beans or another none starchy vegetable like steamed asparagus.
I was a little curious where this dish might have originated so I googled it. "One of the earliest of the 'health food faddists', Dr. James H. Salisbury, a 19th century English/American physician (1823-1905), wrote 'The Relation of Alimentation and Disease'.  Salisbury believed that diet was the main factor governing our health, so he created a special food and diet for his patients suffering from anemia, colitis, gout, rheumatism, arteriosclerosis, tuberculosis, and asthma."  Follow this link to learn more about this doctor's diet views.  

I never was a big fan of Salisbury steak until I found this recipe as I always thought of TV dinners when this dish was mentioned.  Hubby really liked this version too,  I think because of the onions and mushroom gravy.  It reheats well too.   (Sorry, my photos don't show how yummy our dinner was...I'll work on that!)
